Perfect companion to chili. I'm going to brush the top with maple syrup.
3/4 cup yellow cornmeal
1 cup flour
1/3 cup sugar
3 tsp baking powder
1/2 tsp salt
1 cup
1 egg
2 Tbsp melted bacon fat
6 slices crispy cooked bacon, crumbled.
Mix corn meal and milk. Let rest 30 minutes.
Blend the remaining ingredients.
Preheat oven to 425 F. Put skillet in oven to preheat. Add some bacon fat to skillet and brush up sides.
Reduce heat to 375 F while you pour batter into skillet.
Cook 20 -22 minutes
